Spaceworks Tacoma is excited to announce a new creative enterprise: Tacoma’s newest and most unique specialty coffee experience, Pop Up Coffee, founded by Jason Atherton and operated by Director of Coffee, Stacy Stevens.

Pop Up Coffee artfully crafts brewed black coffee drinks through a variety of unique brew methods, including pour-over and aeropress. You won’t find traditional espresso drinks on the menu. Pop Up Coffee prides itself in honoring the craft and health benefits of high-end brew methods, focusing on drinks that do not include milk or sugar.

The idea for Pop Up Coffee came to Atherton when he would travel frequently for work and was disappointed by the lack of high quality coffee options in unfamiliar cities. By utilizing a minimal operating budget and only focusing on brewed coffee, Pop Up can open locations that would not be able to sustain a full-service café.

Pop Up Coffee’s mission is to educate guests on the art and craft of fine coffee (growing, harvesting, roasting, brewing, and drinking). To do this they feature high quality beans that have been artfully roasted and the highest quality brew methods that extract the full flavors from their coffees. They discourage additives like milk and sugar, which can take away from the natural flavors of the coffee.

Pop Up Coffee only serves coffee from the highest quality micro-roasters. They rotate through a featured roaster monthly, starting with Heart Roasters – Portland, OR in October, and Coava Roasters – Portland, OR in November. Menu includes black coffee, hot chocolate, and snacks for kids.

For a unique coffee experience, Pop Up Coffee invites you to join them at any of their three current locations inside the Children’s Museum, Theatre on the Square, or the Tacoma Mountaineers.

Vacancy to Vitality! Spaceworks Tacoma is a joint initiative of the City of Tacoma and the Tacoma-Pierce County Chamber designed to activate empty storefronts and vacant spaces with art and creative enterprise.
